Carbonara ... Yum!
I’m hoping everyone had a fabulous Easter. I love Easter with the egg hunt for my grandchildren, family and friends. We make it an all-day event. We are having it at my oldest daughter, Cody Carol’s, new house this year. We had it last year at my twinners’ house. We have people in and out all day. Lots of adult beverage appetizers and then supper around 3-ish. Remember, Easter just isn’t about candy, it’s about family time, forgiveness, and sacrifice.
This is such a wonderful easy pasta dish. You will need half a box of plain spaghetti, two eggs, one onion, three or four chopped up pieces of thin prosciutto, one can of evaporated milk or 8 ounces of heavy cream, two cups of grated fine Parmesan cheese, EVO, pepper and salt to taste and fresh basil. Now you could add cooked chicken or shrimp to this dish. I made mine without more protein this time.
First, add two tablespoons of EVO to a large sauté pan on medium heat, sauté your onion until soft, add your chopped prosciutto and crisp up your ham. Scramble in your eggs, add cooked pasta and evaporated milk, pepper, then slowly add your cheese. Turn down the heat if it’s cooking too fast. You want to slow cook it so it thickens up with adding your cheese. When it’s done, I chop up some fresh basil to top it off, and you have a delicious pasta dish. You can always cook a whole box of spaghetti. This dish is awesome heated up,and makes good leftovers.
I think, when cooking anything’s possible. Have fun with cooking. I’m in the works with another dessert that a friend makes. She’s going to come to my house to share it with me and all of you. Again, that's in the works, before my crazy summer starts.
