Cheeseburger soup
Hello to all the wonderful people. I hope everyone had a good week. My week was warm and enjoyable. Dana, Evie and I had an awesome adventure. I can check off my bucket list swimming with the pigs in Exumas, a little island two hours away from Paradise Island where we stayed for the week. The Warwick Hotel is a wonderful and friendly place; we highly recommend a visit.
Coming home to the cold and snow … lol. I thought it would be appropriate to make a hardy soup. I’ve worked in a couple restaurants over the years and I would make a daily soup. Cheeseburger soup was pretty popular and we most always sold out of it. List of ingredients (When I make a soup it’s usually a big soup pot full.) Two pounds of Pinkham’s burger, two onions, spaghetti pasta (hand full, broken into half an inch pieces), beef paste, EVO, pepper, three cans of evaporated milk, cup of cheddar and a cup of Havarti. That’s it.
Sauté your onions in some EVO (a couple of tablespoons), add your raw pasta, sauté until onions are soft and your pasta is a little brown. Next, add your fresh burger, cook through and drain off your fat. Now add three cups of water and add two tablespoons of beef paste, bring to a boil then cut back your heat to low. Add your evaporated milk then slowly add your two cheeses. The cheese helps thicken it. Cook on a low heat until everything is nicely melted. Easy and delicious. I serve it with a nice salad, rolls or good ole Saltines.
I realize winter around here is long and tough for some. I love to get away but there is no place like home. I’m one of those people who really make the best of any situation. Now that we have snow, it’s time to get the winter gear on and go out shoveling and take my dog out and play with her. Lucy, our dog, loves the snow. And I can’t forget sliding with the grandkids. Not really sure what’s on the menu for next week. I’m thinking some people are thinking why didn’t she write about the food from the Bahamas? Saving those recipes for when we can dig out the grills. Stay safe and always be kind. Thank you for your support.
