Meatloaf, meatloaf, meatloaf!
When I was growing up, most people ate meatloaf. I was never a real big fan ... But I ate it with my mashed potatoes and corn or peas like everyone else.
Once again it’s right up there with shepherd’s pie ... top 10 in my husband’s world, lol. My husband is a meat and potatoes man. He and I couldn’t be more different when it comes to our palates. I’ve been very creative when it comes to hamburger over the years having to feed five kids and with burger being inexpensive it went a long way.
When I make a pan of meatloaf I go big. We don’t have the traditional sit-down mashed and veggie ... we do it up sandwich Richard and Lisa style. The pictures are by my husband and me.
Richard’s sandwich will consist of lightly toasted whole wheat with American cheese and ketchup on one side of the bread, and extra mayo on the other piece of bread. Bo-o-o! LOL ... my meatloaf sandwich is on an English muffin with baked brie and homemade strawberry-rhubarb jam (homemade by my twinners) - and is awesome.
OK, ingredients list: burger, the only place in town to get wonderful burger is at Pinkham’s Gourmet Market. They make it in-house. It’s lean and yummy. Barbecue sauce, eggs, bread (I use old or ends of a loaf or sometimes bread crumbs). I always use what I have; salt, pepper, celery salt, onion powder, garlic and Worcestershire sauce. Mix burger, eggs and bread together, add BBQ sauce until moist. Add the rest of your ingredients, dash of all the dry, add Worcestershire sauce (I like lots of Worcestershire so probable quarter of a cup), if everything feels too moist, add more bread crumbs. Bake at 350 for about 45 minutes depending on how big a meatloaf you make and how long you want to eat meatloaf sandwiches ...
