Mac-N-Cheese
I hope everyone had an awesome week ... With Halloween just around the corner and being on a Wednesday night smack dab in the middle of a work week, it’s hard to think about what’s for dinner.
Well I’m going to give you the easiest homemade Mac-N-Cheese recipe out there.
Ingredients are macaroni noodles, evaporated milk, Ritz crackers, butter, celery salt, onion powder, salt and pepper, an assortment of cheeses (or cheddar; I use whatever I have in the refrigerator).
First, you boil your noodles, cook and drain. In a deep greased 10-inch by 14-inch pan, add half the noodles. If you have a cheddar block, cut into 1-inch pieces and stuff them into the noodles. Hit the dish with all of your dry ingredients (S & P, onion powder and celery salt), add the rest of your noodles and repeat.
Make sure you shake your three cans of evaporated milk, then pour over the top. Make sure your evaporated milk is seen ¾ up on the side (you don’t want your Mac- N- Cheese to be dry). Cook on 375 degrees for about 30 minutes. Make sure it is bubbling. Bring it out of the oven and stir it well. Pop it back in the oven for about 15 minutes. While that’s finishing up, melt a half stick of butter, add a sleeve of Ritz crackers and toast stir on medium heat. Bring out your Mac-N–Cheese, and add your sautéd crackers on the top. Put your broil on High, and put it back in the oven for about five minutes. Keep a close eye on it. After it’s nice and crispy, bring it out and let it rest about 10 minutes and … Bam!
Now, depending how cheesy you like it, add or take away; you may use shredded as well. No cheese sauce is necessary. This is one of my family’s (young and old) favorite dishes. You can always make it up ahead of time. It heats up well in the microwave. Doesn’t heat up well in the oven. It becomes dried out, yuck!
