Easy crab rangoons
What a busy, busy weekend, lots of basketball for my grades 3 and 4 girls travel team. After three seasons, we did it, we won a game. These girls started in second grade and always played up. The girls they played were in grades 3 and 4. Well, it finally happened, we won, for us it was like winning the gold ball. I want to thank all parents, grandparents, aunts, friends and even a schoolteacher, Barb Crocker, was there. I’m not going to lie. It was a very proud moment for us all. We stayed ahead of Mount Ararat through most of the game but in the last minute, we lost by one bucket. We played hard and well. Our last game was against Bath but we lost steam and lost by only four points. Proud coach.
Homemade crab rangoon – I have never attempted this before. My cousin Tommy made these a very long time ago and they were delicious. I didn’t have the little wraps so I bought egg roll wraps and cut them in four squares with my pizza cutter.
All you need is a half pound of fresh crabmeat at Pinkham’s, two blocks of softened cream cheese, one package of wontons, a dash of onion powder and a dash of garlic pepper. Mix the filling. I used a half of teaspoon of filling in each square; fold into a triangle and pinch along the edges. I made a couple of big ones using the mixture and rolling it like an egg roll.
These are perfect for your air fryer. I had to do some testing on how long to cook. 400 degrees for four minutes. Perfect for all sizes. I made a little soy sauce dip, adding a little chopped ginger and one clove of chopped garlic. It was lovely. Now if you don’t have an air fryer, use a cast iron pan with an half of inch of vegetable oil, but be careful with this method because you’ll have to flip. If you have a deep fryer you’re all set; cook as you do with frying other foods.
