Watermelon salad
Traveling Tuna will return soon … busy, busy, busy. I can’t seem to find a night to go searching for more tuna. Trust me, it will happen after this weekend – things will slow down for me and in a couple of weeks I’ll be on the road again.
I’m hoping everyone is drinking lots of water; wow, has it been hot and humid. Personally, I don’t care for it. I know lots of people love it and I hope you all get your fill.
I’m sharing my favorite summer salad this week. It’s easy and only has three ingredients. It’s salty, sweet and crunchy. When I make this, I go big. I eat it as a main meal or use it for a side dish. It’s so light and refreshing.
OK, you’ll need a medium size seedless watermelon, feta, and cucumbers – that’s it. First, cut up your one cucumber into small chunks, do the same with your watermelon and add your feta, one cup should be plenty. Boom, so easy and so delicious. I’m serving my watermelon salad with steak tips from Pinkham’s. I use my cast iron pan and saute them, served medium with some salt and pepper. You have an easy, fast and delicious dish for a Monday night after work and fun-filled weekend.
A big shout out to Brady’s Restaurant and to Jennie Mitchell for hosting a huge fundraiser for our four-legged friends. It was a blast and everyone who participated was amazing. Crowd favorites were Mike Maxim, Brady’s own Shane and Mark Osborn – you guys rocked the house. Thank you for a Sunday afternoon of nothing but fun.
Please keep all your pets inside; it’s too hot outside and dogs need to stay off hot pavement … we don’t want their paws to burn.
