A pop-up restaurant and bar at Water’s Edge on Davis Island, Edgecomb is opening Thursday, Nov. 19 for Boothbay Lights and Gardens Aglow at Coastal Maine Botanical Gardens. The pop-up restaurant will remain open through the end of the year from Wednesday through Sunday between 4 and 9 p.m.

The Water’s Edge facility at Sheepscot Habour Village Resort has been an event space hosting weddings and group events year-round. Recently renovated and transformed into a restaurant and bar for the holiday season, it offers a relaxed and casual dining experience overlooking the Sheepscot River. The staff invites customers to stop by for happy hour; gather in the comfortable lounge areas and around the stone fireplace, then stay for dinner.

Safety measures have been put into place to allow a safe dining experience for patrons and staff. All staff will be wearing face coverings, and guests are required to wear face coverings in common areas or until seated at a table. Current state restrictions limit Water’s Edge to no more than 50 people at a time (including staff) in the restaurant.

Although not required, reservations are encouraged so the restaurant can better manage its occupancy and stay within state-mandated guidelines. If customers are not comfortable coming into the restaurant, Water’s Edge is also offering take-out and curbside pick-up. To make reservations and to order take-out, call (207) 579-1800.

Chef Mike Nguyen has been a part of the hospitality group for the last two years, first as the head chef at Cozy’s Dockside in 2019, and also as part of the culinary team at Linekin Bay Resort. For those who have been guests at the sister restaurants before, you’ll see some old favorites but also some new items to tempt your palate, including crispy Brussels sprouts, charcuterie board, the “Ricky Bobby,” haddock sandwich, build your own flatbreads, chicken piccata, baked stuffed haddock, daily specials, soups, salads and much more. Guests booking a stay at Sheepscot Harbour Village Resort this holiday season will receive one free ticket for one passenger vehicle to Gardens Aglow.
